I’d met and interviewed him before, the last time when he provided all of the wine to the Art & Wine Gala orchestrated yearly by Dave Bossert and Guy LeLarge that benefits the arts of Santa Clarita. And he was a generous man indeed.

Halibut con CoCo The Halibut con Coco is a popular dish amongst customers at Mojito Caribbean Cuisine. “My mom used to make a coconut dessert, which was one of my favorites growing up,” states owner Rolando Verdecia. “With that as a base, we created the coconut cream sauce that pairs perfectly with a light fish such as Halibut. This dish continues to be one of our top four selling dishes. It’s a balanced sauce, not too sweet, it’s just right.” Mixed in with garlic mashed potatoes and vegetables you have the perfect summer meal! |

Elite Wine Reviews - Eve’s Wine 101  by Eve Bushman Today we wine 101ers get to taste and describe. When I use a word like “soft” think smooth or gentle on your palate, “tight” means I think the wine needs to aerate, or breathe, with decanting, while “tannic” means spicy. The last two bottles I reviewed blind with help from the SCV Vintners and Growers Association. For that tasting think “free association,” as winemakers like to guess where each wine was made. |
